Ingredients

Salad
  • 750 grams of fresh organic carrot or parsnip
  • 1 organic orange (zest and segments)
  • 50-75 grams of dried organic cranberries
Dressing
  • 100-150 grams of kefir strained yogurt
  • 100 ml (homemade) water kefir
  • Optional: 1 clove of garlic
  • 2 tablespoons mix of rapeseed, linseed and walnut oil
  • 1 dash of apple cider vinegar
  • 1 dessert spoon (Manuka) honey
  • Salt and pepper to taste
Garnish
  • Handful of finely chopped nuts, seeds or roasted buckwheat
  • Parsley for a fresh finishing touch

Preparation

  1. Start by washing, peeling, and finely grating or julienning the carrots. Then add the zest and segments of an organic orange, along with the cranberries.
  2. Make the kefir dressing by combining kefir strained yogurt with homemade water kefir, a touch of garlic, a mix of canola, flaxseed, and walnut oils, a dash of apple cider vinegar, a teaspoon of (Manuka) honey, and some salt and pepper to taste. Mix well.
  3. Pour the dressing over the carrot salad and garnish with finely chopped nuts, seeds or roasted buckwheat and a sprig of parsley.

Health tips

  • Kefir strained yogurt and water kefir contain healthy bacteria that support intestinal flora and protect against pathogens or bacteria.
  • Carrots are rich in fiber, essential for healthy bowel function and to prevent overgrowth by harmful bacteria.
  • Vitamin C from orange, cranberries and parsley strengthens the immune system and promotes intestinal health.
  • Cranberries are known for their ability to fight bladder infections.
  • Manuka honey has natural antibacterial properties and can fight antibiotic-resistant bacteria.
  • Garlic is a powerful agent against bacteria such as E. coli, which often cause bladder infections.

This recipe proves that health and flavor can go hand in hand. Enjoy this delicious salad and naturally support your bowel and bladder at the same time!
