Ingredients
Salad
- 750 grams of fresh organic carrots or parsnips
- 1 organic orange (zest and segments)
- 50-75 grams of dried organic cranberries
Dressing
- 100-150 grams of kefir hangop
- 100 ml (homemade) water kefir
- Optional: 1 clove of garlic
- 2 tablespoons mix of rapeseed, linseed and walnut oil
- 1 dash of apple cider vinegar
- 1 dessert spoon (Manuka) honey
- Salt and pepper to taste
Garnish
- Handful of finely chopped nuts, seeds or roasted buckwheat
- Parsley for a fresh finishing touch
Preparation
- Start by washing, peeling and finely grating or julienne the carrots. Then add the zest and segments of an organic orange, together with the cranberries.
- Make the kefir dressing by combining kefir hangop with homemade water kefir, a dash of garlic, a mix of rapeseed, linseed and walnut oil, a dash of apple cider vinegar, a spoonful of (Manuka) honey and some salt and pepper to taste. Mix well.
- Pour the dressing over the carrot salad and garnish with finely chopped nuts, seeds or roasted buckwheat and a sprig of parsley.
