Ah, Easter is just around the corner! A time of coziness, bright colors, and of course... delicious food! To make your Easter celebration even more special, we at Goldea Health are sharing our favorite recipes for a tasty and healthy feast. So, get out your apron and let's get started!

Recipe 1: Healthy pancakes

Ingredients:

  • 100 grams of buckwheat flour
  • 1 ripe banana
  • Handful of fresh spinach leaves
  • 1 organic egg
  • 150 ml vegetable milk (unsweetened)
  • 1 tsp baking powder
  • A pinch of salt
  • Coconut oil or butter for frying

Instructions:

  1. Place the buckwheat flour, banana, spinach, egg, milk, baking powder and salt in a blender.
  2. Mix everything into a smooth batter.
  3. Heat a little coconut oil or butter in a frying pan over medium heat.
  4. Pour some batter into the pan and fry the pancakes on both sides until golden brown.
  5. Repeat this process until all the batter is used.
  6. Serve the green pancakes with some fresh fruit and a drizzle of maple syrup.

Recipe 2: Homemade granola

Ingredients:

  • 200 grams of oatmeal
  • 50 grams mixed nuts, coarsely chopped
  • 50 grams of seeds (such as pumpkin seeds, sunflower seeds)
  • 50 grams of dried fruit (e.g. raisins, cranberries)
  • 2 tbsp raw honey
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat the oven to 160°C and line a baking tray with baking paper.
  2. In a large bowl, combine the oats, mixed nuts, seeds, dried fruit, honey or maple syrup, melted coconut oil, vanilla extract, and salt.
  3. Spread the mixture evenly over the baking sheet.
  4. Bake the granola in the preheated oven for 20-25 minutes, or until golden brown and crispy, stirring occasionally.
  5. Let the granola cool completely before storing in an airtight jar.
  6. Serve the homemade granola with Greek yogurt and fresh fruit of your choice.

Recipe 3: Savory green French toast 

Ingredients:

  • 4 slices of spelt sourdough bread
  • 2 eggs
  • 100 ml vegetable milk (unsweetened)
  • A handful of fresh spinach leaves, finely chopped
  • A pinch of salt
  • Raw milk yogurt
  • Raw honey

Instructions:

  1. Beat the eggs and milk together in a shallow dish. Add the chopped spinach and a pinch of salt and mix well.
  2. Heat a little butter or oil in a frying pan over medium heat.
  3. Dip each slice of whole wheat bread into the egg mixture, making sure both sides are well coated.
  4. Fry the French toast in the pan until golden brown and crispy on both sides.
  5. Serve the savory green French toast with Greek yogurt and a drizzle of honey.

Recipe 4: O ranje smoothie

Ingredients:

  • 2 carrots, cut into pieces
  • 2 oranges, peeled and cut into segments
  • A piece of fresh ginger, peeled
  • 150 ml water or vegetable milk (unsweetened)

Instructions:

  1. Place the carrots, oranges, fresh ginger and water or orange juice in a blender.
  2. Blend everything until smooth and creamy consistency.
  3. Add ice if desired for a cold smoothie.
  4. Pour the smoothie into glasses and serve immediately.

Recipe 5: Turkish poached eggs (cilbir):

Ingredients:

  • 4 organic eggs
  • Raw milk yogurt
  • Garlic, finely chopped
  • Red pepper, finely chopped
  • Paprika powder
  • Fresh parsley, finely chopped
  • Salt and pepper to taste

Instructions:

  1. Bring a pan of water to the boil.
  2. Carefully crack the eggs into the boiling water and cook for 3-4 minutes for soft-boiled eggs.
  3. Carefully remove the eggs from the water and place them on a plate.
  4. Mix the Greek yogurt with finely chopped garlic and red pepper.
  5. Spoon the spiced Greek yogurt onto a plate and place the poached eggs on top.
  6. Sprinkle with paprika powder, fresh parsley and season with salt and pepper.

Recipe 5: Raw vegan cake:

Ingredients:

  • 150 grams raw cashew nuts, soaked
  • 100 grams of dates, pitted
  • 50 grams of grated coconut
  • Fresh fruit (e.g. strawberries, blueberries, raspberries) for topping

Instructions:

  1. Place the soaked cashews, dates and coconut flakes in a food processor.
  2. Mix until a sticky dough forms.
  3. Press the dough into a small pie dish and place in the refrigerator to stiffen.
  4. When the cake is firm, remove it from the tin and top it with fresh fruit.
  5. If desired, drizzle some honey or maple syrup over the fruit.
  6. Slice and serve with a big smile!
